When Matt James and Alison Pray started Standard Baking on Wharf Street about 12 years ago, they didn't even have an exterior sign. But soon they were supplying their breads and pastries to so many Portland eateries that discerning diners knew exactly who they were and how to find them. Today the place has spacious digs on Commercial Street in Portland, right under the Fore Street restaurant, and it supplies 35 to 40 area restaurants daily, besides its own retail trade.
